Mutabbaq Recipe

Mutabbaq (also known as Murtabak or Martabak) is a popular street food in many Middle Eastern and Southeast Asian countries. It's essentially a stuffed pancake or a type of folded omelette pancake, filled with a mixture of eggs, meat (usually lamb or beef), and sometimes onions and spices. Here's a basic recipe for making Mutabbaq at home:

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup water (adjust as needed)
  • 2 tablespoons vegetable oil

For the Filling:

  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 pound ground lamb or beef
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2-3 eggs, beaten
  • Fresh parsley or cilantro, chopped (optional)

Instructions

  1. Prepare the Dough:

    • In a large bowl, mix the flour and salt. Gradually add water and oil, and knead until a smooth, elastic dough forms. The dough should be soft but not sticky.
    • Divide the dough into small balls, about the size of a golf ball.
    • Coat each ball lightly with oil, cover, and let them rest for at least 30 minutes.
  2. Prepare the Filling:

    • Heat oil in a pan over medium heat. Add onions and garlic, sautéing until translucent.
    • Add the ground meat, breaking it up with a spatula. Cook until browned.
    • Stir in cumin, coriander, paprika, salt, and pepper. Cook for a few more minutes until the meat is fully cooked. Remove from heat and let it cool slightly.
    • Once cooled, mix the beaten eggs into the meat mixture. Add parsley or cilantro if using.
  3. Assemble the Mutabbaq:

    • On a lightly oiled surface, roll out one ball of dough as thinly as possible without tearing it.
    • Place a portion of the meat and egg mixture in the center of the rolled-out dough.
    • Fold the edges of the dough over the filling to form a square or rectangle.
  4. Cook the Mutabbaq:

    • Heat a non-stick skillet or griddle over medium heat. Place the filled Mutabbaq in the skillet.
    • Cook for about 2-3 minutes on each side until the dough is golden brown and crispy, and the filling is cooked through.
  5. Serve:

    • Cut the Mutabbaq into pieces and serve hot. It can be accompanied by yogurt, a simple salad, or pickles.
