Ingredients
1 Spanish onion, finely chopped
1 (27 fl oz) can diced tomatoes
1/2 lb. chicken thighs, skinless & boneless
1 lb. beef chuck, cut into 3" cubes
1 l low-sodium chicken broth
3/4 cups butternut squash, peeled, seeded & cut into 4" cubes
2 Yukon gold potatoes, peeled & cut into 4
1 (12 fl oz) cans corn kernels, rinsed & drained
1 scotch bonnet chili pepper
4 tbsp iSpice World FlavorsTM Latin Seasoning
1 green plantain, peeled & sliced into 2" pieces
1 bunch cilantro tied with kitchen twine
1 ripe Hass avocado, peeled, seeded & diced
warm corn tortillas
fresh cilantro & lime wedges for serving
Directions
Step 1: Combine onions, tomatoes, chicken broth, corn, scotch bonnet and iSpice World FlavorsTM Latin Seasoning in a slow-cooker. Stir in the chicken, beef, squash, potato, corn, chili pepper, plantains and cilantro. Cover slow-cooker and cook on low for 8 hours.
Step 2: Serve hot with fresh cilantro, avocado and warm corn tortillas.
