Ingredients
1 1/2 lb. boneless lamb shoulder, cut into 2" cubes
2 tbsp olive oil
2 medium carrots, peeled & large dice
1 large onion, small dice
2 cups canned chickpeas, rinsed & drained
5 tbsp iSpice World FlavorsTM Middle Eastern Seasoning
1/4 cup dried apricots, halved
1 cup canned diced tomatoes
2 cups low-sodium beef stock
fresh cilantro, roughly chopped
2 cups couscous, cooked to package instructions
Directions
Step 1: Heat olive oil in a large frying pan over high heat. Brown lamb on all sides.
Step 2: Pour lamb into a slow-cooker with carrots, onions, chickpeas, iSpice World FlavorsTM Middle Eastern Seasoning, apricots, diced tomatoes and beef stock.
Step 3: Cover and cook on low for 4 hours.
Step 4: Serve tajine over cooked couscous, sprinkled with fresh cilantro.
