Slow Cooker Lamb Tajine

Ingredients

  • 1 1/2 lb. boneless lamb shoulder, cut into 2" cubes
  • 2 tbsp olive oil
  • 2 medium carrots, peeled & large dice
  • 1 large onion, small dice
  • 2 cups canned chickpeas, rinsed & drained
  • 5 tbsp iSpice World FlavorsTM Middle Eastern Seasoning
  • 1/4 cup dried apricots, halved
  • 1 cup canned diced tomatoes
  • 2 cups low-sodium beef stock
  • fresh cilantro, roughly chopped
  • 2 cups couscous, cooked to package instructions

Directions

Step 1

Heat olive oil in a large frying pan over high heat. Brown lamb on all sides.

Step 2

Pour lamb into a slow-cooker with carrots, onions, chickpeas, iSpice World FlavorsTM Middle Eastern Seasoning, apricots, diced tomatoes and beef stock.

Step 3

Cover and cook on low for 4 hours.

Step 4

Serve tajine over cooked couscous, sprinkled with fresh cilantro.
