3 tbsp iSpice World FlavorsTM Southwest Seasoning
1 lb. ground beef
1 onion, chopped
1 (10 oz) can enchilada sauce
1 (15 oz) can black beans, rinsed & drained
1 cup canned corn kernels, rinsed and drained
1 cup shredded tex-mex cheese
4 cups tortilla chips, crushed
2 green onions, chopped
Step 1: Preheat oven to 350 degrees. Spray a baking dish with cooking spray.
Step 2: In a large non-stick pan, fry beef with iSpice World FlavorsTM Southwest Seasoning and onions.
Step 3: Mix in enchilada sauce, black beans and corn.
Step 4: Pour mixture into baking dish. Top with crushed tortilla chips and cheese.
Step 5: Bake for 20 minutes covered in foil, and 10 minutes uncovered.
Step 6: Serve hot with green onions.
