Ancho Chicken

Ancho Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 teaspoons ancho chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Directions

Step 1

In a small bowl, mix together the ancho chili powder, cumin, smoked paprika, garlic powder, and salt.

Step 2

Season the chicken breasts with the spice mixture, rubbing it in to coat the chicken well. Let the chicken marinate in the spice mixture for at least 30 minutes or up to overnight.

Step 3

When you're ready to cook the chicken, heat a large skillet over medium-high heat and add the olive oil.

Step 4

Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Step 5

Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing and serving.
