Ingredients
4 (5 oz) boneless, skinless chicken breasts
3 tbsp iSpice World FlavorsTM Middle Eastern Seasoning
1 large onion, small dice
2 tbsp butter
1 1/2 cups basmati rice, rinsed under cold water
2 1/2 cups low-sodium chicken stock, warm
1/3 cup slivered almonds
fresh parsley as garnish
Directions
Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Combine butter and chopped onion in a large baking dish and bake for 10 minutes until onions begin to brown.
Step 3: Remove baking dish from oven, add rice, mix to combine.
Step 4: Rub chicken breasts with iSpice World FlavorsTM Middle Eastern Seasoning and place over rice, not overlapping them.
Step 5: Pour chicken stock into rice.
Step 6: Sprinkle slivered almonds over the chicken and rice. Cover dish with aluminum foil and bake for 30-40 minutes.
Step 7: Remove foil, return to oven and bake 15 minutes more so almonds start to brown.
Step 8: Fluff the rice with a fork, sprinkle dish with chopped parsley and serve hot.
