Chicken Satay Skewers
1 lb. chicken thighs, skinless & boneless, cut into 3 cm pieces
3 tbsp iSpice World FlavorsTM Asian Seasoning
1/2 cup peanut butter
2 tbsp brown sugar
2 tbsp light soy sauce
2 tbsp fresh lime juice
1 1/2 tsp fish sauce
1 1/2 tbsp sesame oil
fresh coriander & lime wedges for garnish
Step 1: Toss chicken with oil and iSpice World FlavorsTM Asian Seasoning to coat. Marinate 1 hour.
Step 2: Soak 12 skewers in water for 15 minutes. Thread 3 pieces of chicken per skewer.
Step 3: Grill skewers over medium heat for 5 minutes per side until chicken is cooked. Spray the grill before and during cooking process to prevent sticking.
Step 4: Meanwhile, whisk together the peanut butter, sugar, soy sauce, lime juice, fish sauce and sesame oil. If the sauce is too thick, add a tbsp of water at a time.
