Goat Cheese Stuffed Chicken

4 (5 oz) chicken breasts, skinless & boneless
1 cup goat cheese, goats cheese
1 large egg
1/2 cup panko breadcrumbs
2 tsp lemon zest
3 tbsp iSpice WellnessTM Salad Seasoning*
2 green onions, finely chopped
2 tbsp extra virgin olive oil
Step 1: Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Step 2: Whisk together the goat cheese, egg, breadcrumbs, 2 tbsp iSpice WellnessTM Salad Seasoning,* lemon zest and green onions.
Step 3: Slice a 4" slit along the fatter side of each chicken breast. Using the tip of the knife, starting in the slit, carefully cut a deep pocket in each breast without cutting all the way through the chicken.
Step 4: Divide the cheese mix among each chicken breast, packing the stuffing in to the chicken as you go.
Step 5: Rub the chicken with olive oil, place on baking tray.
Step 6: Top each breast with a few thin slices of lemon, overlapping them slightly.
Step 7: Sprinkle with remaining seasoning and bake for 20-25 minutes until cooked through.
