Jamaican Jerk Chicken
6 skin-on, bone-in chicken thighs
2 tablespoons extra-virgin olive oil
Juice and zest of one lime
2 tablespoons iSpice World Flavors™ Jerk Seasoning
2 French shallots, finely chopped
1 cup fresh coriander, finely chopped
Kosher salt, to taste (optional)
1 tablespoon vegetable oil
Step 1: Combine oil, lime, iSpice World Flavors™ Jerk Seasoning, coriander, shallot and chicken in a plastic bag. Massage the marinade into the chicken and refrigerate overnight.
Step 2: Heat an oven-proof skillet over medium-high heat with vegetable oil. Preheat oven to 375° F.
Step 3: Brown the chicken, skin-side first for 5 minutes per side until golden brown.
Step 4: Transfer to oven and roast for 15-20 minutes until chicken temperature is 165° F.
