Ingredients
2 tsp extra virgin olive oil
1 Spanish onion, small dice
1 small carrot, peeled & grated
2 red bell peppers, seeded & thinly sliced
1 can whole tomatoes, finely chopped
1 cup water
2 tbsp iSpice WellnessTM Chicken Seasoning*
4 large eggs
1/4 cup fresh Italian parsley, roughly chopped
Directions
Step 1: Heat olive oil in a cast iron pan or a large pan. Cook the onions for 5 minutes over medium heat until lightly browned.
Step 2: Add carrots and bell peppers and cook 5 minutes.
Step 3: Pour in chopped tomatoes, water and iSpice WellnessTM Chicken Seasoning.* Cook 15 - 20 minutes over medium-low heat until thickened, stirring frequently.
Step 4: When tomato mixture is thick, use a spoon to create 4 deep wells in the mixture to accommodate 4 eggs
Step 5: Crack one egg per well, cover the pan and cook until egg whites are no longer runny, and yolks are just set, about 5 minutes
Step 6: Serve hot, sprinkled with fresh parsley with fresh crusty bread
