Shredded Chicken and New Potato Salad

2 (6 oz) boneless, skinless, cooked chicken breasts
1 lb. new potatoes, scrubbed & halved
3 medium zucchinis, halved & cut into matchsticks
2 cups green cabbage, shredded
3 celery stalks, thinly sliced
1 Granny Smith apple, cut into matchsticks
2 cups green grapes, halved
1/4 cup roasted almonds, roughly chopped
1 cup plain yoghurt
2 tbsp Dijon mustard
2 tbsp cider vinegar
4 tbsp iSpice WellnessTM Chicken Seasoning*
Step 1: Fill a pot with water, a pinch of salt and bring to the boil. Cook potatoes for 15-20 minutes until fork tender, drain and cool completely.
Step 2: Using a fork, shred the chicken breast and put into a large mixing bowl. Toss with potatoes, cabbage, zucchini, apple, celery, grapes and almonds.
Step 3: In a small bowl combine ingredients for dressing.
Step 4: Gently toss dressing into salad and serve.
