Ingredients
1 (5 oz) chicken breast
2 tbsp iSpice World FlavorsTM Southwest Seasoning, divided
1 head romaine lettuce, chopped (4 cups)
1 tomato, fine dice
1/2 cup low-fat shredded tex-mex cheese
2 tbsp canned black olives, sliced
2 green onions, chopped
handful corn tortillas, coarsely chopped
3 tbsp low-fat Greek yogurt
juice and zest of one lime
1/4 cup fresh cilantro, chopped
Directions
Step 1: Preheat oven to 375 degrees.
Step 2: Rub chicken with half the seasoning, bake in a dish for 20 minutes until cooked.
Step 3: Shred chicken, let cool.
Step 4: In a large bowl, lay down a bed of lettuce, topped with shredded chicken, tomatoes, olives and green onions.
Step 5: Mix together the remaining iSpice World FlavorsTM Southwest Seasoning, yogurt, lime juice and coriander. Drizzle over salad.
