Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or cooking spray.
In a large mixing bowl, beat together the butter and powdered sugar until light and fluffy.
Add 2 cups of flour to the butter mixture, and mix until a soft dough forms.
Press the dough evenly into the bottom of the prepared baking dish.
Bake the crust for 18-20 minutes or until light golden brown.
While the crust is baking, prepare the lemon filling. In a medium mixing bowl, whisk together the eggs, granulated sugar, 1/4 cup flour, lemon zest, and lemon juice until well combined.
Pour the lemon filling over the hot crust and return the baking dish to the oven.
Bake for an additional 20-25 minutes or until the filling is set.
Allow the lemon bars to cool completely in the baking dish.
Once cooled, dust the top with powdered sugar.
Cut into squares and serve your delicious lemon bars!
