Vegan Pumpkin Spice Latte recipe

Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup pumpkin puree
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 cup brewed coffee or 2 shots of espresso

Directions

Step 1

In a small saucepan, combine the almond milk, pumpkin puree, maple syrup, vanilla extract, and pumpkin pie spice. Whisk until well combined.

Step 2

Heat the mixture over medium heat, whisking occasionally, until it starts to steam.

Step 3

Remove the pan from the heat and use an immersion blender to blend the mixture until it's smooth and frothy. Alternatively, you can transfer the mixture to a blender and blend until smooth and frothy.

Step 4

Pour the brewed coffee or espresso into a large mug, and then pour the pumpkin spice mixture over it.

Step 5

Stir well and enjoy!
