8 (1") slices sourdough bread
2 tbsp iSpice WellnessTM Salad Seasoning*
2 tbsp Dijon mustard
2 cups grated Gruyere cheese, divided
1/2 lb. thinly sliced Black Forest ham
4 large eggs
4 tbsp butter, softened
4 cups baby spinach
Step 1: Line a baking sheet with parchment paper and arrange slices of bread on tray.
Step 2: Spread 3 tbsp butter over one side of each slice of bread.
Step 3: Combine iSpice WellnessTM Salad Seasoning,* Dijon, 1 1/2 cups cheese in a small bowl. Divide the cheese into 8 portions. Spread cheese onto non-buttered side of each slice of bread.
Step 4: Divide the ham into 4 portions and top 4 slices of bread with sliced ham.
Step 5: Heat 1 tbsp butter in a frying pan until foaming. Wilt spinach, remove from pan and top ham with wilted spinach. Close sandwiches with remaining slices of bread.
Step 6: Return frying pan to heat over medium. Carefully lay the sandwiches down, one at a time, into the pan and cook until dark brown on both sides and cheese is melted.
Step 7: When sandwiches are cooked, return them to baking tray. Sprinkle with cheese and broil until bubbly.
Step 8: Fry eggs sunny-side up in frying pan until whites are just set.
