Ingredients
6 eggs, separated
1/2 cup 5% sour cream
1 tbsp baking powder
4 tbsp freshly grated parmesan cheese
1/2 tbsp iSpice WellnessTM Pork Seasoning*
2 tsp fresh chives, finely chopped
2 cups fresh arugula
1 tsp fresh lemon juice
1 tbsp extra virgin olive oil
Directions
Step 1: Preheat oven to 425 degrees Fahrenheit. Grease 2 medium sized ramekins with cooking spray and set on a baking sheet.
Step 2: In a mixing bowl mix the egg yolks, sour cream, baking powder, cheese and iSpice WellnessTM Pork Seasoning* using a hand blender until completely combined.
Step 3: Whip egg whites until stiff but not dry. Gently fold half the egg whites into yolk mixture using a rubber spatula to lighten mixture before folding in the remaining egg whites. Fold until combined.
Step 4: Spoon egg mixture into prepared ramekins and bake for 15 minutes or until eggs are jiggly but set.
Step 5: Gently toss chives and arugula with lemon juice and oil.
