Samgyeopsal, a beloved Korean dish, is essentially grilled pork belly served with various side dishes and accompaniments. It's simple to prepare and deliciously satisfying. Here's a recipe for you to try at home:

Ingredients:

For the Samgyeopsal:

  • 500g of pork belly slices
  • Salt and pepper to taste
  • Sesame oil (for dipping)

For the Ssamjang (Dipping Sauce):

  • 2 tablespoons of doenjang (Korean soybean paste)
  • 1 tablespoon of gochujang (Korean red chili paste)
  • 1 teaspoon of minced garlic
  • 1 teaspoon of sesame oil
  • 1 teaspoon of sugar
  • 1 tablespoon of chopped green onions
  • Sesame seeds (optional)

Accompaniments:

  • Lettuce leaves (for wrapping)
  • Sliced garlic
  • Sliced green chili peppers
  • Sliced onions
  • Kimchi
  • Steamed rice

Instructions:

  1. Prepare the Pork Belly: Season the pork belly slices with a little salt and pepper.

  2. Make the Ssamjang: In a small bowl, mix together doenjang, gochujang, minced garlic, sesame oil, sugar, chopped green onions, and sesame seeds if using. Set aside.

  3. Grill the Pork Belly: Heat a grill pan over medium heat. Once hot, place the pork belly slices on the pan. Grill them until they are nicely browned and cooked through, turning them occasionally. This usually takes about 3-4 minutes on each side.

  4. Prepare Accompaniments: While the pork is cooking, arrange the lettuce leaves, sliced garlic, green chili peppers, onions, and kimchi on a serving platter.

  5. Serve: Once the pork belly is cooked, serve it immediately with the prepared ssamjang, lettuce leaves, and other accompaniments.

To Eat:

  • Take a lettuce leaf, place a piece of grilled pork on it, add a small amount of ssamjang, and top it with your choice of garlic, chili, onion, and kimchi. Wrap it up and enjoy!
