Creamy Pumpkin Gnocchi

2 tbsp butter
1 small onion, finely chopped
2 tbsp all-purpose flour
1/2 cup white wine
3 tbsp iSpice WellnessTM Vegetable Seasoning*
1 cup water
2 cups milk
2 cups canned pumpkin puree
3 cups fresh kale, stems removed & roughly chopped
1 lb. gnocchi
1/2 cup asiago cheese, grated
1/2 cup parmesan cheese, grated
Step 1: Melt butter in a large pot over medium-high heat. Add onions and sautee until starting to brown.
Step 2: Stir flour and iSpice WellnessTM Vegetable Seasoning* into onions until well combined.
Step 3: Deglaze with white wine, scraping the bottom of the pot to bring up the brown bits.
Step 4: Pour in pumpkin puree, milk and water. Mix well and bring to a slow simmer.
Step 5: Add chopped kale and gnocchi. Cook over medium-low heat, covered for 5-8 minutes until kale is wilted and gnocchi cooked through.
Step 6: Turn off the heat, stir in cheese.
