Greek Style Quinoa Salad
1 cup quinoa
1 1/2 cups water
4 tbsp iSpice World FlavorsTM Mediterranean Seasoning, divided
2 ripe Roma tomatoes, seeded & small dice
1 red onion, small dice
1/2 cup pitted Kalamata olives
1/2 cup light feta cheese, crumbled
1 English cucumber, seeded, small dice
1/4 cup fresh lemon juice
2 tbsp red wine vinegar
3 tbsp extra virgin olive oil
1 tbsp Dijon mustard
Fresh Italian parsley, chopped
Step 1: Bring water to the boil. Add quinoa with 2 tbsp iSpice World FlavorsTM Mediterranean Seasoning, stir well and turn heat to low. Cover and cook over low heat for 10 minutes until all liquid is all absorbed. Turn off heat, let quinoa stand, covered, for 10-15 minutes before fluffing with a fork. Let cool.
Step 2: Whisk lemon juice, vinegar, olive oil, mustard and remaining seasoning in a large salad bowl.
