Middle Eastern Rice Pilaf
2 small onions, small dice
6 stalks celery, small dice
1 tbsp butter
2 cups long-grain rice, rinsed under cold water
1/2 cup black currants
4 TBSP iSpice World FlavorsTM Middle Eastern Seasoning
2 cups chicken stock
2 tbsp fresh parsley
Step 1: Heat butter in a medium size pot over medium-high heat.
Step 2: Add onions and celery. Sweat until onions are translucent.
Step 3: Stir rice into onions and cook for 3-4 minutes. Stir in currants.
Step 4: Add iSpice World FlavorsTM Middle Eastern Seasoning and chicken stock. Bring to the boil, reduce heat to low and cover. Cook for 10 minutes until liquid is absorbed by rice.
Step 5: Remove from heat, let stand covered for 10 minutes.
