Penne with Chickpea Sauce
1 lb dried penne pasta, cooked to package instructions
3 tbsp extra virgin olive oil
1 small onion, small dice
2 small carrots, peeled & chopped
1 cup canned chickpeas, rinsed & drained
3 tbsp iSpice World FlavorsTM Mediterranean Seasoning
2 cups vegetable stock
1/4 cup fresh basil, roughly chopped
3 tbsp toasted pine nuts
freshly grated parmesan cheese
Step 1: Heat olive oil in a large pan over medium heat.
Step 2: Sweat onions and carrots until onions are translucent.
Step 3: Add iSpice World FlavorsTM Mediterranean Seasoning and chickpeas to pan. Cook 5 minutes, stirring often.
Step 4: Transfer mixture to a blender with vegetable stock. Puree until completely smooth.
