Spicy Asian Noodle Salad
8 oz vermicelli rice noodles
1 red bell pepper, seeded & thinly sliced
1 yellow bell pepper, seeded & thinly sliced
1 medium English cucumber, seeded & cut into thin matchsticks
1 cup shredded green cabbage
1 cup shredded purple cabbage
3 green onions, thinly sliced diagonally
1 cup fresh coriander, roughly chopped
1 cup fresh basil, roughly chopped
1/3 cup sesame oil
2 tbsp fresh lime juice
3 tbsp light soy sauce
2 tbsp rice wine vinegar
2 tsp honey
4 tbsp iSpice World FlavorsTM Asian Seasoning
1/4 cup roasted peanuts
1 tbsp Sriracha
Step 1: Boil a small pot of water. Remove from heat and plunge vermicelli rice noodles into water and let sit for 5 minutes until softened. Drain and rinse under cold water.
Step 2: Whisk iSpice World FlavorsTM Asian Seasoning oil, lime juice, soy sauce, rice vinegar, honey, seasoning, peanuts and sriracha in a large salad bowl.
Step 3: Toss noodles, vegetables and herbs with dressing until combined.
