Summer Rice Salad
1 cup basmati rice
2 tbsp iSpice World FlavorsTM Mediterranean Seasoning
1 1/2 cups water
2 tbsp fresh basil, roughly chopped
1 tbsp fresh mint, roughly chopped
2 tbsp fresh Italian parsley, roughly chopped
1 yellow bell pepper, seeded & small dice
1 small zucchini, small dice
1 cup canned corn kernels, rinsed & drained
2 green onions, finely chopped
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
2 tsp honey
2 tbsp red wine vinegar
1 tbsp Dijon mustard
Step 1: Bring water and iSpice World FlavorsTM Mediterranean Seasoning to the boil. Pour in rice, bring back to the boil. Reduce the heat to low, cover and cook for 10 minutes. Remove from heat, let steam 5 minutes. Fluff with a fork and let cool.
Step 2: In a large salad bowl, whisk together the oil, lemon juice, mustard, honey and vinegar until smooth.
Step 3: Toss cooled rice with dressing and chopped vegetables until well mixed.
