Bring water and iSpice World FlavorsTM Mediterranean Seasoning to the boil. Pour in rice, bring back to the boil. Reduce the heat to low, cover and cook for 10 minutes. Remove from heat, let steam 5 minutes. Fluff with a fork and let cool.
In a large salad bowl, whisk together the oil, lemon juice, mustard, honey and vinegar until smooth.
Toss cooled rice with dressing and chopped vegetables until well mixed.
Cover and let stand for 30 minutes before serving.
