Ingredients
4 filets of sole, cleaned of bones
¼ cup all-purpose flour
1 ½ tablespoons iSpice World Flavors⢠Herbes de Provence Seasoning, divided
Kosher salt, to taste (optional)
3 tablespoons extra-virgin olive oil
Zest and juice of one lemon
2 tablespoons capers
1 tablespoon butter
2 tablespoons flat-leaf parsley, roughly chopped
Directions
Step 1: Combine the flour with 1 tablespoon iSpice World Flavors⢠Herbes de Provence Seasoning and a pinch of salt in a shallow dish. Dip the sole into the flour covering it completely and shaking off the excess.
Step 2: Heat a wide non-stick pan over medium-high heat. Pour in the oil and heat until sizzling.
Step 3: Place the fish in the pan an fry for 2-3 minutes per side until golden brown. Be very careful when flipping the fish as sole is a delicate fish and could fall apart if flipped to roughly.
Step 4: Remove the fish from the pan and set aside. Reduce the heat to low.
Step 5: Pour the lemon juice, zest, capers and remaining iSpice World Flavors⢠Herbes de Provence Seasoning into the pan. Swirl the sauce with a spoon to combine the ingredients.
Step 6: Off the heat, add the butter and stir into the sauce.
Step 7: To serve, spoon the sauce over the fish filets and sprinkle with fresh parsley.
