Seared Scallops With Tomato Mango Salsa

Seared Scallops With Tomato Mango Salsa

Ingredients

  • 1 lb. large fresh scallops, connector muscles removed
  • 2 tsp extra virgin olive oil
  • 2 tbsp iSpice WellnessTM Seafood Seasoning*
  • 2 large ripe mangoes, peeled, seed removed & small dice
  • 1 ripe avocado, peeled, seed removed & small dice
  • 2 cups cherry tomatoes, quartered
  • 1/4 cup red onion, small dice
  • 1 jalapeno pepper, seeded & minced
  • 1/2 cup fresh cilantro, roughly chopped
  • juice of two limes
  • hot sauce optional

Directions

Step 1

Heat oil in a non-stick pan over high heat. Toss scallops with iSpice WellnessTM Seafood Seasoning.*

Step 2

Sear scallops 2 minutes per side to form a brown crust.

Step 3

Meanwhile, gently fold together the ingredients for the salsa in a mixing bowl.

Step 4

Serve scallops warm on top of mango salsa with a drizzle of hot sauce if using.
