Seared Shrimp Cobb Salad

4 strips bacon, diced
1 lb. large shrimp, peeled & deveined
2 tsp extra virgin olive oil
2 tbsp iSpice WellnessTM Seafood Seasoning*
4 cups romaine lettuce, cut into bite sized pieces
1 can corn kernels, rinsed & drained
1 large carrot, peeled & shredded
1 cup purple cabbage, shredded
1 cup cherry tomatoes, halved
1 ripe avocado, peeled, seeded & medium dice
3/4 cup plain yogurt
2 tbsp fresh lemon juice
2 tbsp fresh dill, finely chopped
2 tsp iSpice WellnessTM Salad Seasoning*
1 tsp Sriracha
Step 1: Heat a non-stick pan over high heat and cook bacon until crisp. Drain bacon bits on paper towel and discard bacon fat.
Step 2: Pat shrimp dry and toss with fish iSpice WellnessTM Seafood Seasoning.*
Step 3: Heat olive oil over medium-high heat and sear shrimp for 2 minutes per side until cooked through. Remove from heat and reserve.
Step 4: Meanwhile combine ingredients for ranch dressing in a small bowl and set aside.
Step 5: To serve, arrange a bed of romaine lettuce over a serving platter and top with corn, cabbage, tomatoes, carrot, avocado and shrimp.
