Smoked Salmon Chowder

2 tbsp canola oil
1 large Spanish onion, fine dice
4 large carrots, peeled & fine dice
4 celery stalks, fine dice
4 tbsp all-purpose flour
4 cups whole milk
3 Yukon Gold potatoes, peeled & cut into small cubes
3 cups low-sodium vegetable broth
12 oz smoked salmon, small dice
4 tbsp iSpice WellnessTM Seafood Seasoning*
1/4 cup fresh chives, finely chopped
Step 1: Heat canola oil in a large soup pot over medium heat and sweat onion, carrots and celery until translucent.
Step 2: Sprinkle the flour over vegetables and stir well.
Step 3: Pour in milk, stirring continuously until smooth, follow with potatoes, vegetable broth and iSpice WellnessTM Seafood Seasoning.*
Step 4: Cook until potatoes are tender, stir in the smoked salmon and cook for 4 minutes.
