Spicy Scallop Ceviche
1 lb. fresh bay scallops, connector muscles removed
1 1/2 cups fresh lime juice, divided
1 medium onion, small dice
2 ripe plum tomatoes, seeded & small dice
1/2 cup fresh cilantro, roughly chopped
2 tbsp extra virgin olive oil
2 tbsp orange juice
3 tbsp iSpice World FlavorsTM Latin Seasoning
2 celery stalks, small dice
1 large (semi-ripe) Hass avocado, peeled, seeded & diced
Tortilla chips for serving
Step 1: Combine scallops, onion and lime juice (save 2 tbsp) in a bowl. Cover and let rest for 4 hours refrigerated until scallops are cooked. Drain the scallops and onions.
Step 2: Combine scallops, onions, tomato, cilantro, olive oil, orange juice, iSpice World FlavorsTM Latin Seasoning, celery and avocado with 2 tbsp lime juice. Gently fold ingredients together.
