Tangy Baked Cod
4 (6 oz) fillets cod
1 tbsp iSpice World FlavorsTM Mediterranean Seasoning
2 cups cherry tomatoes, quartered
1 shallot, minced
1/2 cup green olives, pitted & roughly chopped
1/4 cup capers
1/4 cup fresh basil, roughly chopped
1/4 cup extra virgin olive oil
1 tbsp red wine vinegar
Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Rub the cod with iSpice World FlavorsTM Mediterranean Seasoning and place in a baking dish.
Step 3: Combine tomatoes, shallot, olives, capers, basil, oil and vinegar in a small bowl and pour over fish.
Step 4: Bake for 20-30 minutes until fish is cooked through.
