Roasted Beet Hummus
1 red beet
1 (15 oz) can chickpeas, rinsed & drained
juice & zest of 1 large lemon
3 tbsp tahini sesame paste
1/4 cup water
2 tbsp iSpice World FlavorsTM Middle Eastern Seasoning
1/4 cup extra virgin olive oil
2 tbsp roasted pine nuts, roughly chopped
Step 1: Preheat oven to 400 degrees Fahrenheit. Wrap beet in aluminum foil and bake for 45 minutes until fork tender. Let cool, peel and cut into chunks.
Step 2: Put beet, chickpeas, lemon zest & juice, tahini paste, water & iSpice World FlavorsTM Middle Eastern Seasoning into the bowl of a food processor and puree until very smooth.
