Ingredients
2 ripe avocados, peeled, seeded & cubed
juice of 1 lime
3 tbsp fresh cilantro, chopped
1/2 small red onion, finely chopped
1 cup tomato salsa
1 (8 oz) container low-fat sour cream
3 tbsp iSpice World FlavorsTM Southwest Seasoning
4 roma tomatoes, seeded & small dice
1 bunch green onions, finely chopped
1 (16 oz) can refried beans
2 cups shredded Monterey-Jack cheese
1 cup canned sliced black olives, drained
Directions
Step 1: In a 9 x 13" dish, spread the refried beans in one even layer covering the bottom of the dish.
Step 2: In a mixing bowl, mash together the avocados, lime, cilantro and onion until well mixed. Scrape avocado out of bowl into dish and spread evenly over refried beans.
Step 3: Pour salsa over avocado layer and spread out evenly.
Step 4: In the same mixing bowl, stir together the sour cream and iSpice World FlavorsTM Southwest Seasoning. Scrape out and spread over salsa layer.
Step 5: Top dip by layering cheese, tomatoes, olives and green onions.
