Ingredients
1 cup frozen peas
2 cups sugar snap peas, trimmed
2 cups snow peas, trimmed & thinly sliced
2 cups arugula
2 cups mint leaves
1 cup low-fat ricotta cheese
1 small cucumber, small dice
1 tbsp iSpice WellnessTM Salad Seasoning*
2 tbsp fresh lemon juice & zest
1 tsp honey
6 tbsp extra virgin olive oil
1 tbsp iSpice WellnessTM Salad Seasoning*
VINAIGRETTE
Directions
Step 1: Fill a small pot with salted water and bring to the boil.
Step 2: Cook peas for 3 minutes, and then add sugar snap peas.
Step 3: Drain and immediately plunge peas into ice water to stop cooking.
Step 4: In the bottom of a salad bowl, whisk together the ingredients for the vinaigrette until well blended.
Step 5: Gently toss the peas, arugula, mint, cucumber and iSpice WellnessTM Salad Seasoning* with the dressing.
Step 6: Dot the salad with little pieces of ricotta cheese and serve.
