Sweet Potato Breakfast Hash

1 large sweet potato, scrubbed & small dice
1 slice bacon, chopped
2 tsp olive oil
4 cups baby spinach
2 large eggs
1/3 cup cheddar cheese, grated
1 tbsp iSpice WellnessTM Pork Seasoning*
Step 1: Heat oil in a non-stick pan over high heat, cook bacon until crispy. Remove bacon with slotted spoon and reserve.
Step 2: Add sweet potato and iSpice WellnessTM Pork Seasoning* to pan, sautee for 10 minutes to brown on all sides.
Step 3: Stir in spinach, sautee until wilted. Mix in cheese until melted through. Scrape hash on to a plate.
