Sweet Potato Breakfast Hash

Ingredients

  • 1 large sweet potato, scrubbed & small dice
  • 1 slice bacon, chopped
  • 2 tsp olive oil
  • 4 cups baby spinach
  • 2 large eggs
  • 1/3 cup cheddar cheese, grated
  • 1 tbsp iSpice WellnessTM Pork Seasoning*

Directions

Step 1

Heat oil in a non-stick pan over high heat, cook bacon until crispy. Remove bacon with slotted spoon and reserve.

Step 2

Add sweet potato and iSpice WellnessTM Pork Seasoning* to pan, sautee for 10 minutes to brown on all sides.

Step 3

Stir in spinach, sautee until wilted. Mix in cheese until melted through. Scrape hash on to a plate.

Step 4

Crack eggs into hot pan and cook to your liking. Top hash with eggs, sprinkle with bacon and serve immediately.
