Ingredients
1 large English cucumbers
4 plum tomatoes, medium dice
2 cups romaine lettuce, chopped
2 tbsp red wine vinegar
2 tbsp iSpice WellnessTM Salad Seasoning*
5 tbsp extra virgin olive oil
1/4 cup freshly grated parmesan cheese
1/4 cup roughly chopped basil
VINAIGRETTE
Directions
Step 1: Cut cucumber in half lengthwise and scrape out seeds using a soup spoon.
Step 2: Cut cucumber in half lengthwise again. Turn cucumbers and chop widthwise to produce a medium size dice.
Step 3: In the bottom of a salad bowl, whisk together the ingredients for the vinaigrette.
Step 4: Toss the cucumbers, tomatoes and romaine with the dressing and serve.
