3 tbsp extra virgin olive oil
6 large zucchinis, spiralized into noodles
1 Spanish onion, finely chopped
1/4 cup Spanish olives, pitted & chopped
1/4 cup Kalamata olives, pitted & chopped
1 cup cherry tomatoes, halved
2 tbsp capers, chopped
1 can tuna, drained
3 cups tomato puree
2 tbsp iSpice World FlavorsTM Mediterranean Seasoning
Parmesan cheese for serving
Step 1: Heat 2 tbsp olive oil in a large saucepan over high heat.
Step 2: Fry onions until starting to brown.
Step 3: Add olives, tomatoes and capers to onions and cook for 1 minute. Follow with tuna, breaking it up with a wooden spoon.
Step 4: Stir in the iSpice World FlavorsTM Mediterranean Seasoning and tomato puree. Bring to a simmer and cook for 10 minutes.
Step 5: In another frying pan, heat 1 tbsp olive oil over high heat. Fry zucchini noodles until starting to brown, about 5 minutes.
Step 6: Toss noodles with sauce and sprinkle with fresh parsley and parmesan cheese.
