One Pan Chicken Fajitas
4 (5 oz) skinless, boneless chicken breasts, cut into thin strips
2 small red onion, thinly sliced
3 bell peppers, seeded & thinly sliced
2 tbsp iSpice World FlavorsTM Southwest Seasoning
2 tbsp extra virgin olive oil
1/4 cup fresh cilantro, roughly chopped
2 Roma tomatoes, diced
2 cups shredded romaine lettuce
salsa, sour cream & shredded cheese as toppings
Step 1: Preheat oven to 400 degrees Fahrenheit. Line a baking tray with parchment paper.
Step 2: Toss chicken, peppers and onions with oil and iSpice World FlavorsTM Southwest Seasoning on tray and spread out to one even layer.
Step 3: Bake for 20-30 minutes until chicken is cooked through.
Step 4: Warm tortillas in oven wrapped in foil.
Step 5: Serve chicken and veggies over warm tortillas, topped with cilantro, tomatoes, lettuce, salsa, sour cream and cheese. Sprinkle with lime juice.
