Roasted Latin Style Pork Shoulder
1 (6 lb.) pork shoulder, skin on
1 large Spanish onion, roughly chopped
1 bunch fresh cilantro, roughly chopped
1/3 cup iSpice World FlavorsTM Latin Seasoning
1/4 cup olive oil
1 tbsp white wine vinegar
fresh lime wedges as garnish
tortillas for serving (10 at 12g each)
Step 1: Preheat oven to 325 degrees Fahrenheit. Prepare a roasting pan with a wire rack.
Step 2: Puree onions, cilantro, iSpice World FlavorsTM Latin Seasoning, olive oil and vinegar until a smooth paste is formed.
Step 3: Score the pork shoulder through the skin making hatch marks.
Step 4: Rub the marinade into the pork, massaging it into every nook and cranny.
Step 5: Place the pork in roasting pan on wire rack. Pour 2 cups water into bottom of roasting pan.
Step 6: Roast the pork for 4-5 hours, turning the pork every hour for best results. Add more water if needed.
Step 7: Finish roasting the pork skin-side up at 400 degrees Fahrenheit until dark brown and crispy. Pork should be falling apart.
Step 8: Serve pork roughly chopped into big pieces with fresh lime and tortillas.
