Shrimp and Veggie Skewers
10 large shrimps, peeled & deveined
1 small red onion
6 cherry tomatoes
6 white button mushrooms
1 small zucchini, sliced into 6 rounds
2 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
2 tbsp iSpice World FlavorsTM Mediterranean Seasoning
Step 1: Toss shrimp with vegetables, olive oil, lemon juice and iSpice World FlavorsTM Mediterranean Seasoning.
Step 2: Soak 8 bamboo skewers in warm water for 10 minutes.
Step 3: Thread shrimp and vegetables in an alternating pattern
Step 4: Heat oven to 400 degrees Fahrenheit and line a tray with parchment paper.
Step 5: Roast skewers for 8-10 minutes until shrimp is pink all the way through.
