Beef and Veggie Empanadas

Instructions equipment

Step 1: Heat a non-stick pan over high heat and lightly spray with cooking spray.

Step 2: Brown beef with iSpice WellnessTM Meat Sauce Seasoning, onions and carrots. When beef is cooked, stir in peas and kale, cook for 2 minutes.

Step 3: Take off the heat, gently stir in the chopped eggs. Let cool completely.

Step 4: On a lightly floured surface, roll out the pie dough until 1/8" thick. Use a water glass to cut out disks of dough.

Step 5: Place about two tablespoons of filling per disk of dough, keeping meat concentrated to the center of the dough.

Step 6: Dip an index finger into some water and run in around the edge of half the disk of dough.

Step 7: Fold the dough in half over the meat, joining the wet half with the dry half, creating a half moon shape. Pinch and press the dough together to create a tight seal. You can use a fork to seal the dough as well.

Step 8: Brush each empanada with egg wash and sprinkle with sesame seeds. Refrigerate for 30 minutes.

Step 9: Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

Step 10: Arrange empanadas on baking sheet and bake for 20 minutes until deep golden brown. Serve warm or room temperature.

  • 1/2 cup frozen peas
  • 1 large egg, hard boiled & finely chopped
  • 2 cups kale, chopped
  • 1 large egg, lightly beaten for egg wash
  • 1 package store-bought pie dough
  • 2 tbsp sesame seeds
