Creamy Pumpkin Gnocchi

Instructions equipment

Step 1: Melt butter in a large pot over medium-high heat. Add onions and sauté until starting to brown.

Step 2: Stir flour and iSpice WellnessTM Vegetable Seasoning* into onions until well combined.

Step 3: Deglaze with white wine, scraping the bottom of the pot to bring up the brown bits.

Step 4: Pour in pumpkin puree, milk and water. Mix well and bring to a slow simmer.

Step 5: Add chopped kale and gnocchi. Cook over medium-low heat, covered for 5-8 minutes until kale is wilted and gnocchi cooked through.

Step 6: Turn off the heat, stir in cheese.

Step 7: Serve hot with more cheese sprinkled on top.

  • 3 cups fresh kale, stems removed & roughly chopped
  • 1 lb. gnocchi
  • 1/2 cup asiago cheese, grated
  • 1/2 cup parmesan cheese, grated
