- 1 lb dried penne pasta, cooked to package instructions
- 3 tbsp extra virgin olive oil
- 1 small onion, small dice
- 2 small carrots, peeled & chopped
- 1 cup canned chickpeas, rinsed & drained
- 3 tbsp iSpice World FlavorsTM Mediterranean Seasoning
- 2 cups vegetable stock
- 1/4 cup fresh basil, roughly chopped
- 3 tbsp toasted pine nuts
- freshly grated parmesan cheese

Instructions equipment
Step 1: Heat olive oil in a large pan over medium heat.
Step 2: Sweat onions and carrots until onions are translucent.
Step 3: Add iSpice World FlavorsTM Mediterranean Seasoning and chickpeas to pan. Cook 5 minutes, stirring often.
Step 4: Transfer mixture to a blender with vegetable stock. Puree until completely smooth.
Step 5: Toss with hot cooked penne, top with basil, pine nuts and parmesan to serve.
