  • 1 cup cold water, divided
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 2 tablespoons pure vanilla extract
  • 1 1/2 tablespoons ground cinnamon

Instructions:

  1. Bloom the gelatin: In a large mixing bowl, combine the gelatin and 1/2 cup of cold water. Allow it to sit while you prepare the sugar syrup.

  2. Make the syrup: In a small saucepan, combine the remaining 1/2 cup water, granulated sugar, corn syrup, and salt. Cook over medium heat until the sugar dissolves, then increase the heat and cook until the syrup reaches 240°F (soft ball stage) on a candy thermometer.

  3. Mix the marshmallow: Slowly pour the hot sugar syrup into the gelatin while constantly beating on low speed. Once all the syrup is added, increase the mixer's speed to high and beat until the mixture is thick and lukewarm, about 10-15 minutes. Add the vanilla extract and cinnamon, then continue beating for another minute.

  4. Set the marshmallow: Pour the marshmallow mixture into a greased and powdered sugar-dusted 9x13-inch baking pan. Dust the top with more powdered sugar and let sit uncovered for at least 4 hours or overnight.

  5. Cut and enjoy: Once set, cut the marshmallows into squares using a sharp, dusted knife. Roll the cut sides in powdered sugar to prevent them from sticking.
