Buffalo Cauliflower Bites

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 cup buttermilk
  • 3/4 cup all-purpose flour
  • 5 tsp iSpice WellnessTM Beef Seasoning*
  • 3/4 cup hot sauce
  • 1 tsp melted butter

Directions

Step 1

Preheat oven to 475 degrees Fahrenheit. Line a baking sheet with parchment paper and spray the paper lightly with cooking spray.

Step 2

Whisk the flour and iSpice WellnessTM Beef Seasoning* together until combined. Pour in the buttermilk and stir to combine. Don't over-mix! If the batter is too thick add ice cold water, one tablespoon at a time until the batter is thick enough to coat the cauliflower without being clumpy or dripping off.

Step 3

Coat each piece of cauliflower in the batter and place on the baking tray spaced apart. Don't overlap the cauliflower or it will come out soggy and unevenly cooked.

Step 4

Bake the bites in the oven for 30 minutes, flipping them halfway through. You want them to be golden and crispy but not burnt.

Step 5

Meanwhile, whisk the butter and the hot sauce together in a large bowl.

Step 6

When the bites are cooked, toss them delicately with the sauce and pour them back on to the baking tray. Spread them out evenly into one single layer, not overlapping.

Step 7

Return them to the oven for 25 minutes, flipping them halfway through.

Step 8

Serve these spicy babies with ranch dip or blue cheese dip and a side of celery or cucumbers.
