Croque Madame

Croque Madame

Ingredients

  • 8 (1") slices sourdough bread
  • 2 tbsp iSpice WellnessTM Salad Seasoning*
  • 2 tbsp Dijon mustard
  • 2 cups grated Gruyere cheese, divided
  • 1/2 lb. thinly sliced Black Forest ham
  • 4 large eggs
  • 4 tbsp butter, softened
  • 4 cups baby spinach

Directions

Step 1

Line a baking sheet with parchment paper and arrange slices of bread on tray.

Step 2

Spread 3 tbsp butter over one side of each slice of bread.

Step 3

Combine iSpice WellnessTM Salad Seasoning,* Dijon, 1 1/2 cups cheese in a small bowl. Divide the cheese into 8 portions. Spread cheese onto non-buttered side of each slice of bread.

Step 4

Divide the ham into 4 portions and top 4 slices of bread with sliced ham.

Step 5

Heat 1 tbsp butter in a frying pan until foaming. Wilt spinach, remove from pan and top ham with wilted spinach. Close sandwiches with remaining slices of bread.

Step 6

eturn frying pan to heat over medium. Carefully lay the sandwiches down, one at a time, into the pan and cook until dark brown on both sides and cheese is melted.

Step 7

When sandwiches are cooked, return them to baking tray. Sprinkle with cheese and broil until bubbly.

Step 8

Fry eggs sunny-side up in frying pan until whites are just set.

Step 9

Top each sandwich with an egg and enjoy!
