Kunafa Recipe

Kunafa Recipe

Kunafa (also spelled Knafeh, Kunafeh, or Kunafah) is a traditional Middle Eastern dessert made with thin noodle-like pastry, or alternatively fine semolina dough, soaked in sweet syrup. It often features a layer of creamy filling. This version of the recipe will use a sweet cheese filling, which is a popular variant.

Ingredients

For the Kunafa:

  • 1 pound kunafa dough (also known as kataifi or shredded phyllo dough), thawed
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 cups mozzarella cheese, shredded (or a mix of mozzarella and sweet cheese like akkawi, if available)
  • 1/2 cup fine semolina

For the Sugar Syrup:

  • 2 cups sugar
  • 1 cup water
  • 1 teaspoon lemon juice
  • 1 tablespoon orange blossom water (optional)
  • 1 tablespoon rose water (optional)

Instructions

  1. Prepare the Sugar Syrup:

    • Combine sugar, water, and lemon juice in a saucepan over medium heat.
    • Stir until sugar is dissolved. Allow to simmer for about 10 minutes until the syrup thickens slightly.
    • Remove from heat and stir in orange blossom water and rose water if using. Set aside to cool.
  2. Prepare the Kunafa Dough:

    • Preheat the oven to 350°F (175°C).
    • Unroll the kunafa dough and tear it into strands. Mix the torn dough with melted butter, ensuring it is evenly coated.
    • Divide the dough into two equal portions.
  3. Assemble the Kunafa:

    • Press half of the buttered kunafa dough into the bottom of a greased round baking pan, creating an even layer.
    • Sprinkle the semolina over the dough, then evenly spread the shredded cheese on top.
    • Cover the cheese with the remaining half of the kunafa dough, pressing gently.
  4. Bake:

    • Bake in the preheated oven for about 30-40 minutes, or until the kunafa is golden and crisp.
  5. Add the Syrup and Serve:

    • As soon as the kunafa is out of the oven, pour the cooled syrup evenly over the hot kunafa.
    • Allow it to soak for a few minutes before serving.
    • Optionally, garnish with ground pistachios or a sprinkle of powdered sugar.
  6. Serve:

    • Serve the kunafa warm or at room temperature. It's best enjoyed the day it's made but can be stored in the refrigerator and reheated.
