Shredded Chicken and New Potato Salad
Ingredients

2 (6 oz) boneless, skinless, cooked chicken breasts

1 lb. new potatoes, scrubbed & halved

3 medium zucchinis, halved & cut into matchsticks

2 cups green cabbage, shredded

3 celery stalks, thinly sliced

1 Granny Smith apple, cut into matchsticks

2 cups green grapes, halved
-
1/4 cup roasted almonds, roughly chopped

1 cup plain yoghurt
-
2 tbsp Dijon mustard
-
2 tbsp cider vinegar
-
4 tbsp iSpice WellnessTM Chicken Seasoning*
Directions
Step 1
Fill a pot with water, a pinch of salt and bring to the boil. Cook potatoes for 15-20 minutes until fork tender, drain and cool completely.
Step 2
Using a fork, shred the chicken breast and put into a large mixing bowl. Toss with potatoes, cabbage, zucchini, apple, celery, grapes and almonds.
Step 3
In a small bowl combine ingredients for dressing.
Step 4
Gently toss dressing into salad and serve.
Step 5
Add salt to taste.
