Shrimp Scampi

Shrimp Scampi

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup white wine (or chicken broth)
  • 1/4 cup freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • Cooked pasta, for serving

Directions

Step 1

Pat the shrimp dry with paper towels and season with salt and pepper.

Step 2

In a large skillet, heat the butter and olive oil over medium-high heat.

Step 3

Add the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.

Step 4

Add the shrimp to the skillet and cook for 2-3 minutes per side, or until they turn pink and opaque.

Step 5

Remove the shrimp from the skillet and set them aside.

Step 6

In the same skillet, pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and let the liquid reduce for 2-3 minutes.

Step 7

Add the shrimp back to the skillet and toss to coat with the sauce.

Step 8

Add salt and pepper to taste, and sprinkle with chopped fresh parsley.

Step 9

Serve the shrimp scampi over cooked pasta or with crusty bread on the side.
