Sinigang is a popular Filipino soup known for its savory and sour flavor, typically using tamarind as the souring agent. Here's a basic recipe for Sinigang:

Ingredients

Main Ingredients:

  1. 500 grams pork (can be ribs, belly, or shoulder), cut into pieces
  2. 1 medium onion, sliced
  3. 2 tomatoes, quartered
  4. 2 green long chili peppers
  5. 1 radish, sliced
  6. 1 eggplant, sliced
  7. A bunch of kangkong (water spinach) or spinach
  8. 1-2 cups string beans, cut into 2-inch pieces
  9. 6-8 cups water

For Souring:

  • Tamarind soup base (sinigang mix) or natural tamarind pulp

Seasoning:

  1. Fish sauce, to taste
  2. Salt and pepper, to taste

Instructions

  1. Boil the Pork: In a large pot, bring the water to a boil. Add the pork and simmer until it starts to tenderize, about 30 to 40 minutes. Skim off any scum that rises to the surface.

  2. Add Vegetables: Once the pork is tender, add the sliced onion, tomatoes, and tamarind soup base or natural tamarind pulp. Cook for a few minutes until the tomatoes are soft.

  3. Seasoning the Soup: Season the soup with fish sauce, salt, and pepper according to your taste.

  4. Adding More Vegetables: Add the radish and cook for about 5 minutes. Then add the eggplant and string beans. Cook until the vegetables are tender, about 5 to 8 minutes.

  5. Final Touches: Add the green long chili peppers and kangkong (or spinach). Cook for another 2-3 minutes.

  6. Adjust the Flavor: Taste the soup and adjust the seasoning if necessary. The soup should have a balance of savory and sour flavors.

  7. Serving: Serve the sinigang hot, ideally with a bowl of steamed rice.
