Spicy Asian Noodle Salad

Ingredients

  • 8 oz vermicelli rice noodles
  • 1 red bell pepper, seeded & thinly sliced
  • 1 yellow bell pepper, seeded & thinly sliced
  • 1 medium English cucumber, seeded & cut into thin matchsticks
  • 1 cup shredded green cabbage
  • 1 cup shredded purple cabbage
  • 3 green onions, thinly sliced diagonally
  • 1 cup fresh coriander, roughly chopped
  • 1 cup fresh basil, roughly chopped
  • 1/3 cup sesame oil
  • 2 tbsp fresh lime juice
  • 3 tbsp light soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tsp honey
  • 4 tbsp iSpice World FlavorsTM Asian Seasoning
  • 1/4 cup roasted peanuts
  • 1 tbsp Sriracha

Directions

Step 1

Boil a small pot of water. Remove from heat and plunge vermicelli rice noodles into water and let sit for 5 minutes until softened. Drain and rinse under cold water.

Step 2

Whisk iSpice World Flavors Asian Seasoning oil, lime juice, soy sauce, rice vinegar, honey, seasoning, peanuts and sriracha in a large salad bowl.

Step 3

Toss noodles, vegetables and herbs with dressing until combined.

Step 4

Serve cold or at room temperature.
