Waldorf salad

Waldorf salad

Ingredients

  • 3 medium-sized apples, cored and diced
  • 1 cup seedless grapes, halved
  • 1/2 cup chopped walnuts
  • 1/2 cup diced celery
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Directions

Step 1

In a large mixing bowl, combine the diced apples, halved grapes, chopped walnuts, and diced celery.

Step 2

In a separate small mixing bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper until smooth and creamy.

Step 3

Pour the dressing over the apple and grape mixture, and toss gently until everything is evenly coated.

Step 4

Taste the salad and adjust seasoning as needed.

Step 5

Chill the Waldorf salad in the refrigerator for at least 30 minutes to let the flavors meld together.

Step 6

When ready to serve, garnish with fresh parsley, if desired.

Step 7

Serve the Waldorf salad cold as a side dish or as a light lunch. Enjoy!
